Yum! Another quick and delicious crockpot recipe.   The flavor combination here is outstanding! I’m not just saying that because the recipe calls for bacon too 🙂

Gather Up:

  • 1 lb of Italian sausage (I used mild, but you can use spicy if you wish), cooked and crumbled
  • 6 or 7 pieces of cooked bacon, chopped
  • 1 qt of chicken broth
  • 1 qt of water
  • 1/2 to 3/4 of a cauliflower, chopped
  • 3 garlic cloves, minced
  • 1 red or yellow onion, chopped (I used half of a large red onion)
  • 2-1/2 cups of chopped kale
  • 1 cup of coconut milk
  • dash of salt and pepper

Add the water and broth to a crockpot, toss in everything except for the kale and coconut milk.  Cook on low at least 4 hours in crockpot.  About 20 minutes before serving, add in the kale, coconut milk, salt, and pepper.

This was a great soup. Very tasty. I did add a whole can of coconut milk though. 1 cup just didn’t seem like enough.

This tasted exactly like the regular version of Zuppa Toscana, but better! I am so grateful to find a diary-free version of my favorite soup! Thanks for the great recipe!!!!
