With berry season in full throttle here in the Pacific Northwest, we love to come up with different recipes to use them in. This salsa can be used as a side or as a topping on your salad. Prep time is about 10 minutes.
Gather Up:
- 2 cups of strawberries, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1/2 onion, chopped
- 1/2 cup cilantro, chopped
- Juice from half a lemon and a full lime
- 1/2 tsp sea salt
Put ingredients in a bowl and mix up. Easy!

Gorgeous…light…easy…Any suggestions for pairing this?…Fish or shrimp….grilled chicken salad?..Thanks for sharing this bit of summer perfection!
All of the above! It’s great with lighter-flavored fish, or simple grilled chicken. You could also shred chicken and toss with spinach and put some of this salsa over the top. For something out of the ordinary – try slicing jicama into “chips” and then dipping.
