Baked “Fried” Chicken

Here’s a great recipe with similar taste to fried chicken, but without it being fried up in nasty vegetable oil.   We recently got a bunch of chickens from Inspiration Plantation.  We kept some whole and cut a few up.  It is actually very easy to do! Perhaps we should post a video soon on how to do it.

Gather Up:

  • Chicken (I used 4 each of legs, thighs, and wings)
  • 6 small dates, pitted
  • 2 eggs
  • 1 cup walnuts
  • 1/2 cup coconut flakes
  • 1 tsp Old Bay
  • 1/2 tsp pepper
  • 1/2 tsp dill
  • 1/4 tsp sea salt

Preheat oven to 350.

Put all ingredients in a food processor except for the eggs.  Mix up slightly, so that it is still powdery and not a paste.   Put this mixture into a wide bowl.  Whisk the eggs and put them in a separate bowl.

Dip each piece into the egg and then into flour mixture. Place on baking sheet.

Bake for approximately 30 to 40 minutes, or until the thicker parts read 165 on a quick-read thermometer. Enjoy!!
