Pickles

I got this wonderful pickle recipe from my friend Jen over at Inspiration Plantation and she was very kind to let me share it.   I got the cucumbers from her as well.  I love getting eggs, chicken, and pork from this local farm.  If you are from this area, make sure to come take a farm tour and stock up on some yummy farm goodness!

If you have not done any canning then this is an easy recipe to start with.  It’s a very easy one for kids to help with too!

Peach Salsa

Peaches are in season!  I made this peach salsa from this link and doubled the recipe.  I love the idea of “Home-Ec” and going back to the basics.  I recently met Diane Sanfilippo who wrote the wonderful book “Practical Paleo” and her way of thinking is divine.  ”I just thought about what my great-grandmother would have done and I did it that way.”  Such basic concepts!   There is something to be said about doing something yourself instead of buying it at the store, from canning to making aprons although maybe not for everyone, but that is just me I guess.   It is such a sense of accomplishment to be able to say, “I made this!” This does take a couple of hours if done by yourself, faster with help of course.

Applesauce

I have three tiny apple trees in my yard.  They are too small yet to produce fruit.  Maybe I would have gotten a few apples this year if the deer hadn’t taken a few (understatement) nibbles?  I don’t know.  Hopefully they will be more established next year and the deer will stay away? I can dream, right?  So, I need some apples to make applesauce.  What is a girl to do?  Get on Facebook and make an announcement, that’s what!  Therefore, because of Uncle John and my friend Jim down at the gym, I was able to get some nice, crisp apples for my applesauce.  They in return get some applesauce and/or a delicious apple treat like crisp or pie (you just keep this in mind for next year if you are finding yourself with some apples you want to part with) :-)

Canning Tomatoes or Why I Love Aunt Donna

Effective food storage and a well-stocked pantry are important secrets for success as a Primal Cook.  In the last few years I have learned how to do some canning.  I used to help my mom as a kid, but did not know all the particulars.  Peaches and apples are my favorite to can, not just because of the end result, but because I can spend some good quality time with my mom doing some “old-fashioned” work!  I remember helping my mom can tomatoes, but didn’t remember how.  So, since Aunt Donna was ready to can tomatoes the other day and needed help, I jumped at the chance (just as she would do!).

My Aunt Donna is the very best!   She loves all things vintage as I do, and so I feel we are kindred spirits.  She is that person in your life who will do anything for anyone and has the biggest heart of anyone that I know.   So not to get all sappy, but I am very thankful for her and to be able to learn so much from her.
