Mango Ginger Shrimp Skewers

Garlic Butter Lake Trout

I made up this recipe using a lake trout (mackinaw) that I had received from a friend on one of my trips home to Idaho, but you could use any cold-water trout or salmon with great results.  One of the keys is to tightly seal the fish inside of a double-layer foil “pouch” and then to cook it at a lower temperature for a longer time to allow the flavor to penetrate while keeping things firm and moist.  And don’t worry about using a whole fish like I did – this would turn out great using fillets or steaks (just use a shorter cooking time).

Paleo Fish and Chips

I mentioned having fish for dinner and so my daughter thought we should try some fried fish as she heard my grandfather used to fry fish all the time.  We actually didn’t cook up any ”chips”, but you can find the recipe for sweet potato fries by clicking on this link.  I took some sweet relish and mixed it in homemade mayo and it turned out great for dipping (similar to tartar sauce)! Kids will enjoy helping with this one and will love the final result!

Lemon Garlic and Ginger Shrimp

The other night, I had elk steaks thawed out to go on the grill, and Karen had picked up a pound of pre-cooked shrimp from our local seafood market.  Since steak and shrimp go together so well, I decided to throw this together to compliment the steaks.  The prep and cooking time are almost nothing since the shrimp are already cooked - so you can get the ingredients ready and quickly cook them while your steaks are “resting” after coming off the grill.

Halibut with Coconut and Macadamia Nut Crust

We live close to a fresh seafood store.  My kids refuse to go inside because it “smells like fish.”  Oh, but is so great to go in and choose some wild caught fish to bring home for dinner.  Today I chose some halibut and decided to top it with a macadamia nut and coconut mixture with a pat of coconut butter.  Hawaiian-inspired meal with prep time start to finish in less than 30 minutes!

Grilled Salmon with Hazelnuts

You gotta love the Pacific Northwest for the seafood!  I decided to cook a Kokanee that Casey caught last summer with my Uncle John.  I have always thought it interesting that John, who has an incredible passion for fishing, doesn’t even like to eat fish unless it is smoked.  He is the master of cooking it to perfection in his smokehouse!  He will also share the fresh caught with friends and family.  I remember once going fishing with Uncle John.   I was pretty proud of what I came home with!  Man.. I wish I still had those boots :-)

And just for fun I had to throw in this picture of my Grandpa Don.  He is pretty proud of these little fish and those are some great boots too!
