This recipe was one I put together for our Christmas get-together with my parents and some family friends around the holidays.  Unfortunately, it’s taken me longer than I planned to get it written up for the site…you’ll have to forgive me for that.  Nevertheless, the turkey was a hit (along with everything else that night), and I think you’ll enjoy it as well.

Baked “Fried” Chicken

Here’s a great recipe with similar taste to fried chicken, but without it being fried up in nasty vegetable oil.   We recently got a bunch of chickens from Inspiration Plantation.  We kept some whole and cut a few up.  It is actually very easy to do! Perhaps we should post a video soon on how to do it.

Apple Ginger Roast Chicken

Yesterday started out extremely overcast, and even sprinkled a few times.  Even though it is mid-July, and summer doesn’t really feel like it has even started for us in the PNW, it had the feeling of a fall day to me.  This got me thinking about apples for some reason, and that led me to put together this simple and tasty roast chicken recipe to use up one of the chickens we had just picked up at Inspiration Plantation on Saturday.

Citrus Herb Roasted Chicken

Last weekend we picked up our monthly share of two fresh chickens from our CSP, and I saved one from going into the freezer so that I could roast it on the grill while it was fresh.  After kicking around a few ideas, I opted for a simple under-the-skin rub of citrus, herbs, and butter to keep things flavorful and moist.  The best part was that it only took about 10 minutes to prep, and the result was fantastic!

Barbecue Crockpot Chicken

Nothing says summer like barbecue chicken and potato salad, right?  We are getting whole chickens (free range) from our CSP right now and it is always fun to come up with new sauces to cook them in.   In April, I posted this recipe with homemade barbecue sauce.  This recipe is similar, but with some slight differences.  Prep time is minimal. Basil Roasted Chicken and Squash

This recipe came about while we were recently on vacation in sunny Arizona (where we were able to get plenty of Vitamin D).  We had the opportunity to spend a week with Karen’s parents in a vacation condo – which afforded us the chance to cook our own meals instead of spending a week eating at restaurants.  We made a point to bring a handful of different spices with us, and then made a stop at the local grocery store as soon as we had checked into our condo to stock up the fridge.  After a lazy morning followed by an afternoon at the pool, we threw this together in just a short time (aside from the time in the oven).
