Peach Salsa

Peaches are in season!  I made this peach salsa from this link and doubled the recipe.  I love the idea of “Home-Ec” and going back to the basics.  I recently met Diane Sanfilippo who wrote the wonderful book “Practical Paleo” and her way of thinking is divine.  ”I just thought about what my great-grandmother would have done and I did it that way.”  Such basic concepts!   There is something to be said about doing something yourself instead of buying it at the store, from canning to making aprons although maybe not for everyone, but that is just me I guess.   It is such a sense of accomplishment to be able to say, “I made this!” This does take a couple of hours if done by yourself, faster with help of course.

Barbecue Crockpot Chicken

Nothing says summer like barbecue chicken and potato salad, right?  We are getting whole chickens (free range) from our CSP right now and it is always fun to come up with new sauces to cook them in.   In April, I posted this recipe with homemade barbecue sauce.  This recipe is similar, but with some slight differences.  Prep time is minimal. Salsa Verde Fresca

Fresh salsa is by far my favorite condiment…I love to have it with a huge variety of other foods, or simply all by itself.  And as much as I usually find myself eating red salsas with lots of tomatoes and onions in them, it is refreshing to change things up with a tangy green salsa like this one.

Homemade Greek Yogurt

I was recently lucky enough to speak with Dr. Allison Siebecker for a few minutes about gut health.  You can check out her website on SIBO (Small Intestine Bacterial Overgrowth) here.  She mentioned to me that she makes her own Greek yogurt.  It is a very simple process although prep to finish takes about a day.

Ribs always remind me of summer barbecues.  I’m not a fan of your typical barbecue flavor, however.  I came up with this tasty combination for a barbecue sauce that did not disappoint.  This is some great stuff! I used rum, but you can  use water instead and it will still turn out great.  The alcohol evaporates out as the sauce simmers.  I baked the ribs in the oven, but they can also be grilled and personally, the next time I make these I am going to slow cook them and the pork will fall right off the bone.

BLT Salad with Homemade Mayo

This is really two recipes in one! This was my first attempt at making homemade mayonnaise and I was pretty proud of myself that it turned out perfect!  Making mayonnaise takes quite a bit of patience, but in the end you will be happy that you didn’t rush it!  I have always enjoyed BLT sandwiches, but bread is now out so what to do?  Make a salad of course!  The amount of time this took was just cooking the bacon, so 20 minutes. This recipe offers great variety as you can add any other veggies, meat, or herbs/spices to your salad to fit your taste buds!
