Our last post of the year! Happy New Year to you and yours! May it be the healthiest year ever for you!

Tasty tasty salad here! I could eat this entire salad by myself!!  If you are planning a get together for New Years Eve, this would make a great potluck dish as you could easily double it (along with the Bacon Wrapped Dates mentioned above).  Please notice in the picture below that I finally got a backsplash in my kitchen, hooray!!  Thank you Uncle Joe!!

Apple Crumble

Today my dad turns 65.  Happy Birthday Dad!!  I know my dad would say that he is proud of me, but I must say that I am more proud of him than any daughter could be.  He is the best dad and a wonderful grandfather.  My dad has taught me to be grateful for what I have, to be genuine, to take responsibility for your actions, and to fight for what you believe in.  Mostly he has taught (and given me) love and respect and always makes me laugh.  I love you dad!!  This recipe is for you and your sweet tooth!!

Pumpkin and Apple Chili

I am pretty proud of myself with this recipe. I basically took some  fall fruit and veggies from our CSA and threw in some elk meat, the tomatoes I canned, and anything else that sounded good, to make this yummilicious chili.  Local, organic, seasonal produce is so extraordinarily wonderful!  I highly recommend signing up for a CSA near you.  You will not regret it one bit!! This is a quick and easy recipe to throw into the Crockpot.
