Chipotle Glazed Pork Steaks

This recipe is quick, easy, and grilled…the perfect combination for a weeknight when the sun is finally starting to make more than a once-per-week appearance and you feel like enjoying a little time on the porch or patio cooking.  And despite the reputation that chopped chipotles have for being a bit spicy, the other ingredients in the glaze on these steaks do a great job of mellowing and complementing the flavor of the smoky chipotle while leaving just a slight amount of kick.

Chipotle Citrus Pork Skewers

Chipotle peppers (smoke-dried jalapeños) add a great blend of smokiness and spice to grilled lighter meats like pork, chicken, and seafood.  When combined with a tangy mix of orange and lime to marinade, things really get tasty.  And of course, there is nothing like serving it cut into bite-sized pieces and on a stick to make it an instant hit.  While this recipe can marinade as little as an hour with good results, I would recommend preparing them the night before and giving it a chance to really absorb all the flavor before cooking.

Paprika & Clove Rubbed Pork Chops

Here’s another quick and easy idea for pork “chops” when you haven’t really planned ahead but want something more than re-heated leftovers for dinner (besides, you should be saving those for lunch).  By taking a handful of different dried herbs and spices that you should have in your spice rack, you can blend together a rub that steps just a little outside the ordinary and is sure to be a hit.
