Chicken Fajitas

Tomorrow is Cinco de Mayo – so what better recipe to post today than one inspired by the great flavors of Mexican and Southwest cuisine.  While purists may complain that fajita traditionally refers to a specific cut of beef, no one can argue that the word today has been broadened to include any number of meats seasoned, grilled, and mixed with sautéed bell peppers and onions and served with a healthy helping of guacamole.

This recipe needs to marinate overnight, so you’ll want to run out and get the ingredients today so that you can have these ready to serve at your fiesta tomorrow!

This recipe I have had for a while from an unknown magazine, calls for you to marinate your pork.  The amount of time is up to you, 30 minutes, 4 hours, or overnight.  Whichever way you choose, it is moist and delicious!

Bengali Roasted Chicken

This recipe uses a unique blend of ingredients common to the Bangladesh area with a mixture of veggies and sweet potatoes to make a complete meal.  Roasted in a very hot oven, the yogurt sauce reduces down to a thick glaze coating.  This recipe will make a lot, so you’ll have plenty for leftovers, or enough for about 6 adults for dinner.  Set aside a few hours for preparing and marinading before cooking, and then about an hour to cook before serving.

Grilled Steaks with Cumin Cherry Tomatoes

The flavor of cumin could be described as the “definitive” spice of foods we typically associate with the Southwest US and Mexico.  Of course, it is also a signature flavor of many dishes from the Middle East, Northern Africa, Northern India, Nepal, and many other places around the world.  It is among the most widely used spices in the world, and in our kitchen as well.  This simple recipe uses cumin with a host of other popular spices to take care of nearly an entire meal (just add another vegetable or a salad).  And even if you don’t like raw tomatoes (like me), you might be surprised how good this chutney is.
