Lemon Garlic and Ginger Shrimp

The other night, I had elk steaks thawed out to go on the grill, and Karen had picked up a pound of pre-cooked shrimp from our local seafood market.  Since steak and shrimp go together so well, I decided to throw this together to compliment the steaks.  The prep and cooking time are almost nothing since the shrimp are already cooked - so you can get the ingredients ready and quickly cook them while your steaks are “resting” after coming off the grill.

Creamy Coconut Shrimp

Not too far from us there is a great seafood store.  I love to buy my Old Bay seasoning there.  They usually have a great selection of wild caught seafood. My girls love to look at the live clams.  Stopping in the other day I saw some shrimp and decided to grab some.  I made up this recipe really quick and it was a delicious meal combined with a salad, or it could even be the “surf” in your “surf and turf” meal.

Coconut ‘Yogurt’ Chicken Skewers

These grilled chicken skewers have a great mix of flavors, and the prep is really easy.  If you don’t have metal skewers, then be sure to soak your bamboo skewers at least 30 minutes prior to using so they won’t burn when on the grill.

Pear-Ginger Marinated Steaks

This marinade recipe has a distinctively Asian influence, and was incredible with the elk sirloin steaks we had when my parents came to visit for Christmas.  Served with our Pomegranate, Apple, and Walnut Salad from the other day, it was a great meal for the days leading up to our Christmas feast.

Ginger Port Cranberry Jelly

Here is another recipe from our own Thanksgiving feast this past week.  It has a good balance of sweet and tart, and is very easy to make ahead of time.  By itself, it can be used as a simple small dessert, or it can be combined in any number of ways with other foods as a seasoning for turkey or pork, or as a topping to something like the quick cheesecake treats.
