Blueberry Lemon Muffins

There is a wonderful new book being released tomorrow called “Practical Paleo” by Diane Sanfilippo.  I was lucky enough to get a copy of this book pre-release date.  Not only does Diane offer some delicious recipes that are super easy, she also explains the concept behind the Paleo lifestyle.  But beyond this, she lets you in on the USDA guidelines for food and why they are unfounded.  She explains how your body is like a bank of sorts and you need to make good deposits in order to get some meaningful withdrawals.  Putting food into your body such as grains and artificial sugars are not giving your body any sort of nutrients it needs in order for you to get what you want out of it.  Makes complete sense, right?

She explains how to heal the gut.  I also love the fact that she mentions this is not a “one-size fits all” lifestyle.  People have allergies or certain foods they need to avoid and this she also addresses.  Whether your goal is fat loss, blood sugar regulation, thyroid health, or if you have MS, fibromyalgia, chronic fatigue syndrome, autoimmune condition(s), or neurological issues, she offers a lifestyle plan for you.  Are you following a nightshade-free diet or FODMAPS? (more on this later); this is covered also.

I am very impressed with the layout of this book and the concise, simple format.  Very easy to read and follow. I have read a lot of books, articles, and blogs on paleo/primal and I love how she touched on some new things that I didn’t know.

Citrus Herb Roasted Chicken

Last weekend we picked up our monthly share of two fresh chickens from our CSP, and I saved one from going into the freezer so that I could roast it on the grill while it was fresh.  After kicking around a few ideas, I opted for a simple under-the-skin rub of citrus, herbs, and butter to keep things flavorful and moist.  The best part was that it only took about 10 minutes to prep, and the result was fantastic!

Lemon Pepper Pork Chops

The other night, I was looking for a quick weeknight recipe to take advantage of the warmer weather we are finally starting to experience here in the Pacific Northwest.  Rather than fall back on the standby of using a pre-mixed herb blend from the spice drawer, I decided to try something using fresh ingredients instead.  The resulting lemon pepper marinade was great with pork chops, and would be equally tasty with chicken or fresh shrimp and scallops.

Lemon Garlic and Ginger Shrimp

The other night, I had elk steaks thawed out to go on the grill, and Karen had picked up a pound of pre-cooked shrimp from our local seafood market.  Since steak and shrimp go together so well, I decided to throw this together to compliment the steaks.  The prep and cooking time are almost nothing since the shrimp are already cooked - so you can get the ingredients ready and quickly cook them while your steaks are “resting” after coming off the grill.

Grilled Salmon with Hazelnuts

You gotta love the Pacific Northwest for the seafood!  I decided to cook a Kokanee that Casey caught last summer with my Uncle John.  I have always thought it interesting that John, who has an incredible passion for fishing, doesn’t even like to eat fish unless it is smoked.  He is the master of cooking it to perfection in his smokehouse!  He will also share the fresh caught with friends and family.  I remember once going fishing with Uncle John.   I was pretty proud of what I came home with!  Man.. I wish I still had those boots :-)

And just for fun I had to throw in this picture of my Grandpa Don.  He is pretty proud of these little fish and those are some great boots too!
