Sweet Potato Salad with Chives

For this recipe you could use either homemade mayo or greek yogurt. I usually make my own yogurt, but you can also get store bought.  Just make sure it is full-fat.  Fage is a good brand.  This is a bit of a twist on potato salad with some different herbs.  I always think potato salad tastes best when it has sat in the refrigerator for a while, letting all the flavors incorporate nicely.  This salad was no exception as once I made it we ate it right away, but the leftovers were even better the next day.

Daube with Mushrooms and Shallots

Daube (pronounced “dobe” – long “o” sound, silent “e”) is French for meat stew.   There are many variations on how to cook this.  We used the handy Crockpot again and it turned out delicious!  The beef did marinate in wine for a day, although you could marinate it overnight or as little as four hours if you wish.

Tarragon Chicken

Tarragon is an herb you may not cook too much with, but French cooks use it a lot.  It is similar to anise.  You can learn more about it here. It’s a wonderful herb for this recipe as it gives a delicious flavor and smell.  This recipe is also nice because it is quick to prepare.
