Guacamole

Ingredients
  • 2 ripe avocados
  • 2 tablespoons of chopped cilantro
  • Juice of one lime
  • 1 clove of garlic, minced
  • 5 grape tomatoes, chopped (or 1 roma tomato, chopped)
  • pinch or two of salt
Instructions
  1. Cut the avocados in half and take out the pit.
  2. Scoop out into bowl with all ingredients except tomatoes.
  3. Mash and mix everything with a fork, keeping a more rustic texture.
  4. Add the chopped tomatoes and mix in.
  5. Serve fresh.

Yum, guacamole! There are many variations to this, but here is a really simple one that you can whip up quickly and it tastes delicious.  Avocado is a great fat source.  Did you know that many of the vitamins in the veggies we eat are fat soluble?  This means you will get more out of your veggies when eaten with some fat.  A fantabulous reason to eat guac!  This recipe is wonderful as a dip for veggies, to put on top of taco salad, or just eat it plain.


Gather Up:

  • 2 ripe avocados (ripe means they are a bit soft when you grab them)
  • 2 tablespoons of chopped cilantro
  • Juice of one lime
  • 1 clove of garlic, minced
  • 5 grape tomatoes, chopped (or 1 roma tomato, chopped)
  • pinch or two of salt

Cut the avocados in half and take out the pit.  Scoop out into bowl with all ingredients except tomatoes and mix with a fork.  You can also use a food processor, although I recommend to just pulse a couple of times so it will still be chunky. 

Add chopped tomatoes and mix in.  Enjoy!
