Bacon and Beef Frittata

Ingredients
  • 1 lb of burger (elk, beef, bison.. whatever you like)
  • 6 strips of bacon
  • 6 eggs
  • 1-1/2 cups mushrooms, chopped
  • 1 shallot, chopped
  • 1 to 2 cloves of garlic. chopped
  • 2 cups of kale, chopped
  • 1 tablespoon of coconut oil, divided
  • 1/4 cup almond flour
  • Optional: 1 cup shredded cheddar cheese (we used Kerry Gold brand)
Instructions
  1. I found it easiest to just use three pans here to cook everything at the same time. Cook the burger in one pan with half the coconut oil, the bacon in another, and then the rest of the oil, mushrooms, shallot, kale in another.
  2. Beat the eggs in a separate bowl and then pour in the almond flour and stir. Heat the oven to 400 degrees.
  3. Once burger is cooked thoroughly, crumble into the bottom of a 8×8 pan or pie pan.
  4. Chop up the bacon and mix into the veggie mixture. Put this mixture on top of the burger mixture.
  5. Next, pour the egg mixture on top and then sprinkle top with cheddar cheese.
  6. Bake for 12 minutes, or until the eggs are fully set.

 

This is one of those meals where really “throwing in what sounds good” works with pretty much flawless perfection.

Gather Up:

  1. I made this the night before we were going to eat it. Being a lazy cook I browned the bacon and shallot, browned the beef in the same pan. Once they were done I put them in a mixing bowl and cooked the remaining ingredients except eggs in the drippings. When they were done everything, including eggs got mixed together and put into the baking pan.
    Once done I refrigerated it overnight and it was just as tasty reheaated the nest morning. My very picky husband declared it a KEEPER!
