Beef and Bacon Chowder

This recipe may be more fitting for a cool fall day, but it was so good that it would be great any time of year!  The kids loved it as well.  I have to admit it came out even more delicious than I expected!

Gather Up:

  • 1 pound or so of ground beef
  • 10 to 12 strips of bacon
  • 1/2 onion, chopped
  • 10 or so mushrooms, sliced
  • 5 small potatoes, peeled and chopped
  • 3 carrots, cut into coins
  • 2 cans of full-fat, organic coconut milk
  • 2 tbsp coconut oil, divided
  • 1 tbsp butter (optional)
  • 1/2 tsp salt
  • 1 tsp pepper

Don’t be scared by all the pots and pans in the picture.  This actually goes fairly quickly (start to finish you will be eating in less than an hour) and even faster with help.  Getting things cooking all at once helps save time.

In a large pot, pour in coconut milk, butter, and spices and simmer on low. In another pot or large saucepan, pour in some water and drop in carrots and potatoes.  Heat to a boil.  Once carrots and potatoes are soft, drain and drop them into the pot of coconut milk.  Place 1 tbsp of coconut oil in a skillet and throw in the mushrooms and onions.  Sautee on low.  Once finished, pour into pot of coconut milk.  Place the other tbsp of coconut oil into another pan and cook the beef. Once the beef is finished, drain and put beef into pot with the coconut milk.  Next, cook up the bacon in the same pan the beef was in.  Cook the bacon to crispy stage if you wish.  Chop up the bacon into small pieces and put into pot with coconut milk.

Bring the entire mixture to a boil and then simmer.   Serve alone or with a large salad.  Enjoy the deliciousness!
