Here’s a nice variation to your sweet potatoes. This would be great to have as a side to your eggs in the morning, a side to your dinner, or save some for a rejuvenating post-workout snack. Although eating primal now, we don’t separate meals too much anymore and label one as “breakfast” or “dinner” as we find dinner foods are great for breakfast too and vice versa! This is definitely something you can have any time of day.
Gather Up:
- 2 large sweet potatoes, peeled and cut into small chunks
- 1/4 teaspoon sea salt
- 1/2 teaspoon fresh grated ginger
- 1/4 teaspoon fresh grated nutmeg ( I admit I didn’t grate the nutmeg this time although I did have some to grate.. I was in a hurry.. forgive please! 🙂 )
- 1/4 teaspoon of pure maple syrup
- 2 tablespoons of butter
Add sweet potatoes and salt to water-filled pot and bring to a boil until potatoes are soft.
Drain all but about 1/4 cup of the water. Throw the rest of the ingredients into the pot and mash.
