This recipe for grilled chops and plums I got from Sunset Magazine and modified it somewhat. It called for brown sugar which truly I feel is not necessary. The plums and sweet onions add plenty of sweetness.
Gather Up:
- 4 to 5 pork chops
- 1/4 to 1/2 tsp sea salt
- 1/4 to 1/2 tsp black pepper
- 1/2 a sweet onion, cut into slices
- 5 or so plums, pitted and cut in half
- 1 tbsp ginger, minced
- 1 tsp of coriander
- 1/2 teaspoon dried mustard
- 1 tbsp cider vinegar
- 2 tbsp coconut oil, divided
Heat the grill to approximately 470 degrees. Sprinkle the chops with salt and pepper and place them on the grill. Throw some coconut oil into a heated saucepan, about 2 teaspoons (to be honest, I don’t really measure this, I just toss some in 🙂 ). Once melted, remove pan from heat and toss in ginger, coriander, vinegar, and mustard, then stir. Remove mixture from pan and set aside for now. Save pan to use for onions (below).
While pork chops are cooking, brush the plums and onions with coconut oil. Place plums on the grill and turn once, approximately 5 minutes total.
Keep an eye on the plums and chops. Toss some coconut oil and the onions into pan and cook until soft. Once plums are done, slice in half and put them in the pan with the onions as well as the spice mixture and mix thoroughly.
Serve plums and onions over pork chops.
