Coconut Butter Bark

As the holidays quickly are upon us, we are tempted to eat all of those unhealthy goodies.  Well, I guess it is only once a year and if you keep it to a minimum, then I say “enjoy!”  But, here is a basic recipe for a quick bite of some good fat without feeling guilty when reaching for a treat.

 Gather Up:

  • 1 jar of coconut butter or coconut manna (it is the same thing)
  • 1 tablespoon of coconut oil
  • some pieces of 80% dark chocolate (optional)
  • some almonds (optional)

Chop almonds and put on a cookie sheet.  Toast at 400 degrees for 5 minutes.

I melted the coconut butter by placing it into a pan of water (Note:  The water is just for boiling and is not used as an ingredient in the recipe).  There may be faster methods such as using the microwave, but many of you know my microwave has not worked since March and sometimes a microwave doesn’t cook/melt evenly and can burn.  It may take a few minutes for the butter to melt.  Just get it to melt enough in the jar so it can be poured into a different saucepan to melt it further.

Once the coconut butter is transferred to another pan, add one tablespoon of coconut oil.  Melt completely. I did a double boil here to avoid burning with my saucepan of water and my saucepan in which I poured the coconut butter.  Next, melt chocolate in another pan.

Put a piece of parchment paper onto a cookie sheet.  When all is melted, pour some of the coconut butter onto the parchment paper.  Mix some more coconut butter with the chocolate.   I also drizzled some chocolate onto the coconut butter.  Sprinkle on some toasted almonds.  See pictures.  Once all poured, place cookie sheets into the refrigerator for a couple of hours to cool.  Once cool, break into pieces and enjoy your fat treat!!
