We live close to a fresh seafood store. My kids refuse to go inside because it “smells like fish.” Oh, but is so great to go in and choose some wild caught fish to bring home for dinner. Today I chose some halibut and decided to top it with a macadamia nut and coconut mixture with a pat of coconut butter. Hawaiian-inspired meal with prep time start to finish in less than 30 minutes!
Gather Up:
- 1.5 pounds of halibut
- 3/4 cup to 1 cup of macadamia nuts
- 3/4 cup unsweetened coconut
- 1 egg
- 2 tablespoons of arrowroot powder
- 1/2 teaspoon of pepper
- 1/4 teaspoon of sea salt
- 1-2 pats of coconut butter per serving
Turn the oven to 400 degrees. Pour the nuts and the unsweetened coconut into a food processor and let mix until a crumbly consistency (probably 20 seconds or so). Add in salt and pepper and mix again.
Next, mix the egg up in a bowl and brush onto the halibut. Poor the arrowroot powder onto a plate and spread it around. Place the halibut on top of the powder, turning to coat. Then put the halibut onto a stoneware pan.
Next, coat the halibut with the nut mixture.
Bake for 20 minutes or so, until halibut is flaky and opaque. Garnish with a bit of coconut butter on top and serve with your favorite side. Mine is coconut creamed greens! Enjoy!
I made this the other night and used sturgeon instead of halibut….It was delicious! The kids said ” this is the best paleo dinner you’ve ever made.” I will be making this again soon..Thanks for another great recipe!
