Strawberry Salsa

Ingredients
  • 2 cups of strawberries, chopped
  • 1 bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1/2 onion, chopped
  • 1/2 cup cilantro, chopped
  • Juice from half a lemon and a full lime
  • 1/2 tsp sea salt
Instructions
  1. Put ingredients in a bowl and mix up. Easy!

With berry season in full throttle here in the Pacific Northwest, we love to come up with different recipes to use them in.  This salsa can be used as a side or as a topping on your salad.  Prep time is about 10 minutes.

Gather Up:

  2. All of the above! It’s great with lighter-flavored fish, or simple grilled chicken. You could also shred chicken and toss with spinach and put some of this salsa over the top. For something out of the ordinary – try slicing jicama into “chips” and then dipping.
