Roasted Baby Leeks

This recipe is my new favorite side.  We used baby leeks, but you can use regular size too.  They have a similar taste to green onions.  Leeks add great flavor to your meat when chopped up and used in a marinade too.

Gather Up:

  • A Bunch of leeks
  • A sprig of fresh oregano, chopped
  • 1 large clove of garlic, or 2 small cloves, chopped
  • 1/4 onion, chopped small
  • 1 tbsp of cider vinegar
  • 2 tablespoons of expeller-pressed coconut oil, melt

Preheat oven to 400 degrees.  Cut the ends of the leeks, just slightly.  Put the leeks into boiling water and blanch for about 3 minutes. You can also melt the coconut oil at the same time 🙂

Remove from heat and put leeks into ice water to stop them from cooking.  Drain and squeeze out as much water as you can.

Place leeks into  bowl. Pour in the oil and vinegar.  Toss in the oregano, onion, and garlic.  Mix it all up and lay out on a baking sheet.  Place in oven for about 10 minutes.  Serve with your main dish.  Delicious!!

Ingredients
