Onion Rings

Ingredients
  • 2 large onions, sliced into rings
  • 3/4 + cup of coconut oil
  • 2 + cups almond flour
  • 2 eggs
  • 2 tbsp Old Bay
  • 1 tsp salt
  • 1 tsp black pepper
Instructions
  1. Whisk the eggs together in a bowl.
  2. In a separate bowl mix in the almond flour and spices.
  3. Heat 1/2 cup of coconut oil in a pan.
  4. Form an assembly line of sorts, dipping an onion ring into the egg mixture and then into the flour mixture and put into the coconut oil. Let heat on one side then flip over to the other side. Make sure it has enough time to cook on one side before you flip as the more you flip it the more chance you may knock the breading off.
  5. Keep adding coconut oil as you go. You may have to use a fork and grab some of the breading that comes off into the oil. You may need more flour mixture too depending on how many you want to make.

Here is our version of onion rings. It has potential to make a bit of a mess, but is a fun one to let the kids help with and totally worth it!

Gather Up:
