Pork Fried Cauliflower Rice

Ingredients
  • 1 head of cauliflower*
  • 3 large mushrooms
  • 1/4 onion, chopped
  • 3 green onions, chopped
  • 4 eggs, scrambled
  • 2 tbsp coconut oil
  • 2 tbsp gluten-free tamari sauce or coconut aminos
  • Bacon, chopped (optional)
  • 1/4 cup cashews, chopped (optional)
Instructions
  1. *Note: Make sure to adjust amounts of mushrooms, onion, coconut oil, etc if you are using a larger head of cauliflower.
  2. Pulse cauliflower in a food processor to resemble a rice texture. If including bacon, fry it up and then chop into small pieces. Scramble up the eggs and then chop them up as well.
  3. Add coconut oil to a frying pan and melt on med low. Add cauliflower, mushrooms, and onion (not green onion yet). Saute’ until soft. Turn off heat and stir in tamari sauce until completely mixed in. Put into bowl and toss in green onions, eggs, bacon, and cashews. Serve!

I have a new side dish that I love and I love it even more since it is really quick to make!  I actually didn’t add any pork to this side, but you could do that easily by frying up a little bit (or a lot) of bacon.

Gather Up:

  • 1 small head of cauliflower*
