This is a recipe I saw in a Costco magazine a while back that I modified. It is a good one to concoct, especially if you are short on time for preparation. Make it up in the morning, throw into the crockpot, and let it slow cook to perfection until dinnertime. Feel free to add any veggies you would like.

I will have to try this one. I have a package of those in the freezer and wasn’t sure what to do with them.
What would you substitute the red wine with?
Not sure on your reason for the substitution, but you could maybe use a combination of grape juice and/or maybe use a few other tomatoes and squeeze the juice out of them. The wine gives it the distinct flavor (ie that bite that makes this dish special), however, and the alcohol does evaporate out of the dish as it cooks.
