Sausage and Kale Soup

Yum! Another quick and delicious crockpot recipe.   The flavor combination here is outstanding! I’m not just saying that because the recipe calls for bacon too 🙂

Gather Up:

  • 1 lb of Italian sausage (I used mild, but you can use spicy if you wish), cooked and crumbled
  • 6 or 7 pieces of cooked bacon, chopped
  • 1 qt of chicken broth
  • 1 qt of water
  • 1/2 to 3/4 of a cauliflower, chopped
  • 3 garlic cloves, minced
  • 1 red or yellow onion, chopped (I used half of a large red onion)
  • 2-1/2 cups of chopped kale
  • 1 cup of coconut milk
  • dash of salt and pepper

Add the water and broth to a crockpot, toss in everything except for the kale and coconut milk.  Cook on low at least 4 hours in crockpot.  About 20 minutes before serving, add in the kale, coconut milk, salt, and pepper.

Instructions
  1. You have the option of having this slow cook all day or heating in a saucepan at med-high heat for about 30 minutes. Add the water and broth to a crockpot or saucepan, toss in everything except for the kale and coconut milk.
  2. Cook on low at least 4 hours in crockpot or med-high heat for about 30 minutes. About 20 minutes before serving, add in the kale, coconut milk, salt, and pepper.

  1. This was a great soup. Very tasty. I did add a whole can of coconut milk though. 1 cup just didn’t seem like enough.
