Here is a great dressing that we’ve been using on salads lately. We just mix up a quick batch right before dinner is ready, and it’s just enough for a couple of side salads.
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 2 tsp no-salt seasoning blend (or other blend of Italian herbs such as oregano, thyme, marjoram, garlic and basil)
Just before it’s time to eat, combine everything in a small prep bowl and whisk to fully combine. Use a spoon to drizzle over your salad, and dig in! You can also make up a larger batch and simply save it in a glass jar in the fridge. Stir it up well before serving.

Sounds simple and delicious! Any other salad dressing recipes you could share? We eat a lot of salad, but always seem to dress it exactly the same.
Actually, Karen has one she was planning to share pretty soon (I’ll have to check with her on when). Another one that I made up just last night used about 1/4 cup of reserved sauce from our Honey Dijon Salmon recipe. I added 2 tbsp of apple cider vinegar and about 1-1/2 tbsp extra virgin olive oil to the reserved sauce for a great Honey Dijon Vinaigrette.
