This simple recipe is perfect for a week night when you want something flavorful without spending a lot of time on it. Pair it with a quick salad and some steamed veggies, and you’ll have dinner on the table in under 30 minutes.
- 1-1/2 lbs salmon fillets – assorted sizes
- 1-1/2 tsp Old Bay seasoning
- 2 tsp garlic powder
- 1/2 tsp coarse black pepper
- 2 tbsp coconut oil, melted
Preheat the grill to 350 degrees indirect heat (you could use the oven as well, but with a good grill, who would want to?). Combine the spices with coconut oil and mix well. Spread over the top of the salmon fillets.
Place the skin directly on the grill (or on a rack over a baking dish if you are using the oven). Cook for about 20 minutes, until the meat is just flaky in the thickest part. Serve, and enjoy!
