We look forward to fall, especially when we know we will be getting some squash from our CSA. Delicata is one of our favorites as it has a light flavor and can blend in well with many dishes. This is a squash we may have never tried if it wasn’t for getting it seasonally from a CSA. We highly encourage everyone to join a CSA from a local farm. Support your local farm and get some delicious, seasonal fruits and veggies! This is a really easy recipe we got here that we modified a bit.
Gather Up:
- 1 delicata squash
- 2 tablespoons of EVOO (extra virgin olive oil)
- 2 tablespoons of apple cider vinegar
- 1/8 cup to 1/4 cup dried, unsweetened cranberries, blueberries, or golden raisins
- 1/8 cup to 1/4 cup dried, unsweetened apricots or mangos
- 1/4 cup green onions, chopped
- 1/4 cup raw almonds, chopped
- 1/4 tsp of ground pepper
- 1/4 tsp of sea salt
Slice off the small ends of the delicata squash and then cut the delicata in half lengthwise. Scoop out the stringy inside with the seeds (hopefully you are composting!) and then slice each half into thin pieces. Place a steamer basket into a pot, pour water into pot until it just reaches the bottom of the basket. Boil the water and then place the squash into the basket. Put a lid on the pot and boil for about 5 minutes or until tender.
Whisk the olive oil and vinegar together with the pepper and salt in a medium bowl.
Add in squash and mix together. Then add in cranberries and apricots. Sprinkle with almonds.

Did you leave the skin on the squash?
Yes, delicata has a very thin skin and there is no problem leaving it on. It won’t toughen when it’s cooked like the skin on other squash.

How is this best served? Warm or cold?
We served it warm which is preferable, but I think it would taste good cold as well.
